Ethiopia is where coffee was born, and Yirgacheffe is where it peaked. Grown at 1,700–2,200 meters in the highlands of southern Ethiopia, these beans develop slowly at altitude — concentrating sugars and creating a complexity you won't find at lower elevations. The result: bright citrus up front, bergamot and jasmine floral notes in the middle, and a clean finish that lingers. Roast it light and every one of those flavors comes through.
